Nipperkin, the signature cocktail concept tucked away under Mayfair’s acclaimed NIJŪ, has launched a new micro-seasonal menu offering guests innovative ways to experience Japanese flavours while showcasing the best of hyperlocal ingredients.
The ever evolving menu is designed to reflect the rhythm of the seasons, as inspired by the harvest cycle and produce found in each season. Divided into three categories, Prep Season (September – November), Lean Season (December – March), and Plethora Season (April – August), the menu ensures that the freshest and most abundant ingredients are in the spotlight.
Currently in the Lean Season, cocktails reflect minimalism tied to the scarcity of locally sourced ingredients. Allowing the team’s creativity to shine, the beverages centre around foraging techniques and earth-bound seasonal ingredients, from woodruff to beetroot and truffles.
Standout cocktails from the Lean Season include the Meech’s Quince & Beeswax, an aromatic take on an old-fashioned featuring Exmoor raw wildflower honey and organic beeswax alongside a quince liqueur, and the Grilled Leeks & Truffles, a unique savoury spin on a Negroni with a made-in-house grilled leek spirit, Cambridge truffle gin and pickled onion vermouth.
Other signature cocktails on the menu include the Heritage Radishes & Koji, a drink between a dirty martini and dry gimlet that showcases radishes from Herefordshire, distillate of Koji spores and Shiso leaves grown in Norfolk, combined with a rose vermouth and radish-brine.
For guests seeking low-and-no-alcohol options, the new menu offers an extended selection of offerings, spotlighting Nipperkin’s house-made non-alcoholic spirits. The Norfolk Mint & Shiso highlights a spiced non-alcoholic spirit, shiso leaves, Norfolk-grown garden mint and London Essence ginger ale for a refreshing long drink, while the Sugar Snap Peas & Jasmine Tea offers a fresh and effervescent beverage with a non-alcoholic snap pea distillate, ‘artic’ celery, pickled cucumber and fermented jasmine tea.
