The Irish Coffee is one of those drinks that feels almost too simple to be this good. Coffee, whiskey, sugar, and cream—yet when it is done properly, it becomes something far more than the sum of its parts.

The story begins in the 1940s at Foynes Flying Boat Terminal, where chef Joe Sheridan created it to warm up weary transatlantic passengers. When asked if it was Brazilian coffee, he famously replied, “No, it’s Irish coffee.” The drink later made its way to the U.S., where Stanton Delaplane helped popularize it at the Buena Vista Cafe, turning it into an international staple.
Variations
- Use a richer demerara syrup instead of sugar for a deeper, more molasses-like sweetness.
- Try a slightly stronger coffee for a more pronounced contrast with the cream.
- Add a touch of vanilla or nutmeg to the cream if you want a subtle twist without overpowering the drink.
Why A Lush Life Loves It
This is comfort in a glass, but done properly, it never feels heavy or overly sweet. The key is balance: hot, strong coffee, good whiskey, and cream that sits perfectly on top rather than sinking in. It is one of those drinks that feels like a ritual, and when you get it right, it is quietly perfect.
