Ingredients
  

  • 40 ml gin (they use Renais Gin)
  • 10 ml 10ml Everleaf Forest
  • 25 ml Fresh Lemon Juice
  • 5 ml 5ml Tio Pepe Fino
  • 20 ml Bay Honey Syrup

Instructions
 

  • First, make the bay honey syrup by bringing water to a boil and infusing bay leaves into it for 10 minutes to steep.  Filter them and then whisk together a 3:1 ratio of honey to bay water to make an incredibly tasty and herbaceous honey syrup.
  • Add all of the ingredients to a shaker
  • Add ice
  • Shake, shake, shake
  • Strain into a coupe
  • Garnish with a lemon twist
