This Mai Tai cocktail recipe is from international rum expert, Lisette Davis of Rumboat Retreat in Grenada, containing Grenadan Clarke’s Court special dark rum! This yummy cocktail photo was taken by Lisette!
- 2oz Clarke’s Court Special Dark Rum
- 1oz lime juice
- 1/2 ounce orange curacao
- 1/2 oz orgeat syrup
- 3/4 ounce spiced sugar syrup*
- garnish lime twist
*You will need to prepare a spice infused sugar syrup using star anise, cinnamon, cloves, all spice, fennel and nutmeg - all grow in abundance in Grenada! Add equal parts water and sugar, with all the spice in a pot and heat until the sugar is dissolved. Let set a few hours and then taste. If you like it, then sieve and place in a glass jar. This can be kept in the fridge.
