Ask for a Ranch Water in a bar in Marfa or Fort Worth and nobody blinks. Ask for one in London five years ago and you’d have gotten a blank stare. That’s changed fast, and it’s easy to see why: this is tequila, lime and fizz, and nothing else is getting in the way.

Nobody can agree on exactly who invented it, but everyone agrees on why it stuck around. Three ingredients, a lot of ice, zero fuss. No shaker, no syrup, no bar cart required.
That sparkling water is traditionally Topo Chico, the Mexican mineral water whose bubbles are aggressive enough to have basically become part of the drink’s identity. You can make it with something else. A Texan will have opinions about that, but the drink will still work.
What Tequila Should I Use?
Blanco is the classic choice. It’s peppery and citrusy in a way that holds up next to the lime instead of vanishing under the bubbles. This is such a stripped-back drink that the tequila you choose actually matters, so look for something made from 100% blue agave rather than anything sweetened or flavoured.
Reposado works if you want something rounder and slightly richer, but start with blanco. It’s the reason the combination works in the first place, and it’s also the tequila we call for in our Margarita and Tequila Mule, so it’s worth having a decent bottle in the house regardless.
Do I Really Need Topo Chico?
Not strictly, but it helps. Topo Chico’s carbonation is unusually persistent, so the bubbles are still doing their job by the time you’re halfway through the glass. A lot of sparkling waters go flat within minutes and leave you drinking watered-down tequila and lime.
If you can’t get hold of it, reach for the most aggressively carbonated mineral water you can find. Anything gentler isn’t going to hold up.
Ranch Water Variations
Once the basic version is second nature, it’s an easy drink to play with. A few slices of jalapeño add heat. Muddled or juiced grapefruit, or a splash of grapefruit soda, pushes it toward Paloma territory. Some people salt the rim, though I skip it. Part of the appeal here is how clean the drink is, and salt gets in the way of that.
Whatever you change, keep the equation intact: tequila, fresh lime, plenty of bubbles. Everything else is optional.

Ranch Water
Ingredients
- 2 oz blanco tequila
- 1 oz freshly squeezed lime juice
- 4 oz Topo Chico or sparkling mineral water
- Garnish: Lime wedge or wheel, to garnish
- Ice
Instructions
- Fill a highball or Collins glass with plenty of ice.
- Add the tequila and freshly squeezed lime juice.
- Top with Topo Chico and give everything a gentle stir.
- Garnish with a lime wedge or wheel and serve immediately.
