Tequila, lime and sparkling mineral water served long over ice. Closely associated with West Texas, it's wonderfully simple and exactly the sort of drink that proves tequila doesn't need much messing about with.

Ingredients
  

  • 2 oz blanco tequila
  • 1 oz freshly squeezed lime juice
  • 4 oz Topo Chico or sparkling mineral water
  • Garnish: Lime wedge or wheel, to garnish
  • Ice

Instructions
 

  • Fill a highball or Collins glass with plenty of ice.
  • Add the tequila and freshly squeezed lime juice.
  • Top with Topo Chico and give everything a gentle stir.
  • Garnish with a lime wedge or wheel and serve immediately.
