The 2-Ingredient Italian Drink That’s Better Than a Gin and Tonic

The Limoncello Di Capri Tonic is a two-ingredient Italian highball made with Limoncello Di Capri and tonic water, garnished with mint and lemon zest. It takes under two minutes to build, needs no bar tools beyond a highball glass, and delivers a bright, lemony, low-effort drink that tastes like Capri in a glass.

This is the official signature serve from Limoncello Di Capri itself, the Sorrento lemon liqueur made on the slopes above the Gulf of Naples, and it’s become one of the easiest ways to bring a taste of the Amalfi coast to a home bar.

What Is Limoncello Di Capri?

Limoncello Di Capri is a lemon liqueur made with PGI Sorrento lemon peels, alcohol, water and sugar, produced by Molinari using traditional methods on the Sorrento peninsula and the island of Capri. Unlike generic limoncello, it’s made exclusively from the Ovale di Sorrento, a protected lemon variety grown specifically in that region, which gives it a rounder, less astringent citrus flavour than cheaper alternatives. Most people know limoncello as a chilled after-dinner digestif, but it holds up just as well in a mixed drink, and tonic is the simplest way to prove it.

What You Need Before You Start

You don’t need much for this one, which is part of the appeal.

Ingredients:

  • Limoncello Di Capri
  • Tonic water, chilled
  • A sprig of fresh mint
  • Lemon zest, for garnish
  • Ice

Equipment:

You can skip a jigger if you’re not fussy about precision, but the 1:3 ratio of limoncello to tonic matters more than it looks. Too much tonic and the drink turns watery; too little and it tips into cloying territory.

Common Mistakes and How to Avoid Them

Using warm tonic. Tonic water that isn’t fully chilled will melt your ice faster and dilute the drink before you’ve had a proper sip. Keep a bottle in the fridge rather than relying on ice alone to cool it.

Stirring too hard. This isn’t a shaken cocktail. Over-stirring knocks the fizz out of the tonic and leaves you with a flat drink. A few gentle turns is all it needs.

Skipping the zest. Lemon zest isn’t just decoration here. Expressing the oils over the glass (give the peel a gentle twist above the drink before dropping it in) adds an aromatic lift that a lemon wheel alone won’t give you.

Using the wrong tonic. A heavily flavoured or artificially sweetened tonic can clash with the lemon liqueur. A clean, classic tonic water lets the Limoncello Di Capri do the talking.

Getting the ratio wrong. Free-pouring without measuring is the most common way this drink goes wrong. Stick to roughly 1 part limoncello to 3 parts tonic as a starting point, then adjust to taste.

Tips for a Better Limoncello Di Capri Tonic

  • Chill your glass first. A cold glass keeps the drink colder for longer and slows dilution.
  • Use big ice cubes if you have them. Larger cubes melt more slowly than crushed ice, keeping the drink from getting watery.
  • Try it with basil instead of mint. Swap the mint sprig for a couple of basil leaves for a slightly more savoury, herbal edge, particularly good in warmer weather.
  • Make it a spritz. For a more celebratory version, Limoncello Di Capri’s other signature serve swaps the tonic for prosecco and a splash of soda, garnished the same way.
  • Batch it for a crowd. Multiply the ratio and mix everything but the tonic and ice in a jug ahead of time, then top individual glasses with tonic as you serve so it stays fizzy.
