The Gold Rush might sound like something from the 1800s, but it is actually a modern classic. Created in the early 2000s at the legendary Milk & Honey by T.J. Siegel, it quickly became a go-to for bartenders who wanted something simple, balanced, and just a little bit luxurious.

Think of it as the Whiskey Sour’s smoother, slightly richer cousin. Bourbon brings warmth, honey softens the edges, and fresh lemon keeps everything bright. It is the kind of cocktail that feels effortless but tastes like you know exactly what you are doing.
Variations
- Use a darker, richer honey for more depth, or a lighter one if you want the bourbon to shine.
- Add a dash of Angostura bitters for a slightly spiced finish.
- Try it served up in a coupe for a more elegant presentation.
Why A Lush Life Loves It
This is one of my favorite cocktails. Honey and bourbon are a match made in heaven! The honey gives it a softness that makes it incredibly easy to drink, while the lemon keeps it from ever feeling too rich. It is simple, yes, but that is exactly why it works so well.
