One of my fav bars in London has introduced a new collection of 16 signature creations, Second Nature,  that refine classic serves through visuals, texture and an air of whimsy!!

Second Nature is not a reinvention but a refinement of their existing programme. Created by former Lush Lifers and industry figures Jack Sotti, bar manager Pedro Montero, award-winning head bartender Laurie Howells and the whole team, the new menu reimagines classic cocktails through a playful, textured lens. 

Throughout, contrasts are embraced with precision martinis served alongside boozy jellies and caviar bumps paired with nostalgic soft serves. The result is a menu that reflects the bar’s evolving identity, producing cocktails as delightful as they are sophisticated. Fifteen of the serves are available spirit-free for those looking to imbibe without the alcohol content.  

Here are a few of the new cocktails!The Kir Royale combines Grey Goose Vodka, peach, hay, sherry and Champagne, enhanced by a jelly element, while the Soixante Quinze blends Renais Gin, St-Germain, elderflower, lemon, white chocolate and Torrontés, served with a signature caviar bump. 

For a more fruit-forward profile, Mizuwari features Toki whisky with banana, fig leaf and jasmine, finished with fluid gels and a crisp plantain garnish while Plum Manhattan layers Rabbit Hole Heigold bourbon with plum, sesame and ginger, elevated with an amazake cheong ferment to create a nuanced take on the classic. 

Those looking for lighter, fruit-forward flavours can explore a range of refreshing serves. Hawaiian Margarita combines Codigo Rosa Tequila, baijiu, pineapple, tomato and Manchego through a cheese infusion and tomato ice, creating a vibrant, tropical profile.
