How to Make the Daiquiri

The Daiquiri is one of the purest expressions of what a cocktail can be. Born in Cuba in the late nineteenth century and named after a small mining town near Santiago, it quickly became a favourite of American visitors and writers alike, including Ernest Hemingway.

At its heart, it is simply rum, lime, and sugar, but that simplicity is exactly what makes it so good. When properly balanced, it is crisp, refreshing, and quietly perfect, with nowhere for poor technique to hide.

The first time I had a properly made Daiquiri, it completely changed my mind about it. It was in a bar that took it seriously, ice cold, perfectly sharp, and gone far too quickly. Now it is my go to test of whether a bar really understands the basics.

Ingredients
  

  • 2 oz White Rum
  • 3/4 oz Simple Syrup
  • 3/4 oz Lime Juice
  • Garnish: Lime Wheel

Instructions
 

  • Add rum, simple syrup and lime juice in a cocktail shaker
  • Fill shaker with ice and shake until chilled
  • Strain cocktail into a coupe glass
  • Garnish with lime wheel
