Add the six raspberries to a shaker and muddle with the simple syrup
Add the gin, lemon juice, and egg white to the muddled raspberries
Shake, shake, shake
Add ice
Then shake again
Strain into a chilled coupe glass
Garnish with two speared raspberries.
Notes
You can use raspberry syrup if you don't have fresh raspberries. Add 1 cup sugar and 1/2 cup water to a pot. Stir until the sugar has dissolved. Add 1/2 cup fresh raspberries, and crush. Let sit until cooled and then strain to remove the seeds.
