The Cloud
One of the masterpieces from Paradiso, awarded the World's Best Bar 2022. Have fun making your own cloud!
Ingredients
- 40 ml Mezcal Union
- 40 ml Amaro Montenegro
- 10 ml Fino sherry infused with hibiscus
- 20 ml xilitol cordial
- 1 piparra
- Sparkling water
Instructions
- Add all the ingredients to a highball glass filled with ice
- Top with sparkling water
- Garnish with a nasturtium leaf and a coffee cloud

It’s a type of pepper.
I’ve been to Paradiso a couple of times when I travelled to Barcelona from Melbourne, Aus. This was my favourite cocktail there and can’t wait to make it. Any specific Amaro you recommend? Where did you get the recipe?
