Stauning Danish Whisky Launches Høst

Stauning, the award-winning distillery on the west coast of Denmark, is launching HØST (40.5%), a unique rye and single malt blend, this spring. The latest addition to Stauning’s portfolio, HØST, which translates to ‘harvest’ in Danish, honours the natural beauty of the West Denmark landscape and the season that provides the grains essential to these unique and delicious Danish whiskies.

A testament to Danish provenance, HØST is a celebration of the rye and barley cultivation which has played a crucial role in the way of life on the West Coast of Denmark for centuries. Painstakingly crafted in homage to the relationship between humans and nature, a symbol of the turning seasons and the cycle of growth that produces the raw materials needed to make rich and flavoursome Danish whisky.

Rooted firmly in a sense of place, Stauning HØST is a flavoursome, fruit-forward whisky with floral undertones, a result of its aging process. Delicate, smooth and balanced, it is aged in  bourbon and heavily charred new American white oak casks before being finished in port barrique casks, HØST delivers notes of vanilla, beeswax and citrus on the nose. When sipped, meadow honey, toffee, apple and red berries shine through, with a syrupy cinnamon, oak and subtle spice finish.

As with all Stauning whiskies, HØST is made with grain from the fields surrounding the distillery, with every grain floor-malted in house – a process that few distilleries in the world still practice. Distillation and maturation all take place on-site, creating a spirit that reconnects to its raw materials to capture the essence of its home whilst celebrating the collective effort involved in its creation.

Alex Munch, one of Stauning’s founders, says “Each harvest, farmers give over a portion of their fields to wildflowers, adding a riot of colour to the stretches of grains that carpet the land. We created HØST to celebrate the closeness of nature and nurture, the deliberate rye and barley hand-in-hand with the sudden colour of wild flowers, just as our modern, sustainable distillery sits alongside acres of green fields.”
