How to Make the Dirty Pickle Martini

The dirty martini has a mischievous little sibling, and it smells like a deli counter. Swap the olive brine for pickle brine and the whole drink gets a dill-scented lift, with garlic, a tangy edge, and a finish that begs for another sip. Think of it as a martini with a snack built in.

A Little History

The martini is the most argued-over drink in the cocktail canon, so I’ll keep this brief. The dirty martini borrowed a splash of olive brine to bring salt and savor to a spirit-forward glass. The pickle version has no single documented origin. It’s a modern riff, and bartenders reach for it because pickles and bar snacks have always belonged together. Tips

Mind the brine. Start with ½ oz and adjust. Too much and you’re drinking a pickle jar.

Use brine you’d happily eat. Choose a dill pickle brine with garlic and herbs, not a sweet bread-and-butter style. Sweet brine turns the drink murky and strange.

Pick your spirit. A London dry gin brings juniper to the party. Vodka keeps things cleaner and lets the dill lead.

Chill everything. A freezer-cold glass keeps the drink crisp from first sip to last.

Variations

Gin or vodka. Gin is bolder and more botanical. Vodka is quieter and sharper.

Extra dry. Cut the vermouth to a rinse for a drier, brinier drink.

Spicy. Use brine from a jar of spicy pickles for a little heat.

Softer. Go the other direction with my 50/50 Martini as a gentler base, then add a whisper of brine.

Ingredients
